CHASE Cheesecake Competition
I've just made a gorgeous white chocolate cheesecake for a cheesecake competition for CHASE at The Half Moon in Warninglid. It looks lovely. I wish I could eat it! I have worked extra hard on it hopefully it wins.
Maybe I will have to buy a slice of it and see whether it deserves to win.

Chocolate Orange Cupcakes
I've just made a fresh batch of chocolate orange cupcakes they look delicious!Hopefully they taste good too. Below is the recipe:-
Ingredients
115g dark chocolate
90g unsalted butter
175g caster sugar
zest and juice of 1 orange
2 large eggs
185g plain flour
half teaspoon of bicarbonate of soda
half teaspoon of baking powder
half teaspoon of salt
1 tablespoon semi-skimmed milk
preaheat the oven to 160c fan/180c/350f/gas mark 4 and line a 12 hole muffin tray with the right size cup cake cases.
Break the chocolate into pieces and place in a bowl. Melt in a microwave. Stir well or you could place the chocolate in a heat proof bowl or saucepan of just simmering water. Stir occasionally until comletely melted. Set bowl aside to cool.
In a large mixing bowl cream the butter,sugar and orange zest until the mixture is pale and smooth, which should take 3-5 mins using an electric hand mixer, add the eggs and beat again briefly.
Mix the flour,bicarbonate of soda, baking powder and salt in a bowl.
Mix the milk and orange juice in jug.
Add the chocolate to the creamed mixture and beat on a low speed until the mixture is just combined. The batter will be streaky. Add one-third of the flour mix and beat until it all comes together. Add half of the juice/milk mix and beat again until the mixture comes together. Repeat these steps until all the ingredients have been incorporated.
Carefully spoon the mixture into the cupcake cases filling them about two thirds full. Bake in oven for aroound 25-30 mins.
Take out of oven and leave them to cool down before decorating.
